Roasted Sweet Potato and Fresh Fig Salad

The savory and sweet flavors in this Roasted Sweet Potato and Fresh Fig Salad go so well together. The salad tastes hearty and earthy because of the roasted sweet potatoes, and it tastes naturally sweet because of the fresh figs. There is a tangy balsamic vinaigrette dressing on top of this salad, which is made even better with crunchy walnuts and creamy goat cheese.

Ingredients:

  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 fresh figs, quartered
  • 4 cups mixed salad greens
  • 1/2 cup crumbled goat cheese
  • 1/4 cup chopped walnuts
  • 1/4 cup balsamic vinaigrette dressing

Instructions:

Start by heating the oven to 400F 200C

Add the sweet potatoes cubes to a bowl and mix them with the olive oil, salt, and pepper

Place the sweet potatoes on a baking sheet in a single layer

Roast them for 25 to 30 minutes, or until they are soft and slightly browned

For the dressing, mix balsamic vinaigrette with a pinch of salt and pepper in a bowl while the sweet potatoes roast

Let the sweet potatoes cool down a bit after theyre done

Fresh figs, crumbled goat cheese, chopped walnuts, and mixed salad greens should all be put in a large salad bowl

Add the balsamic vinaigrette dressing to the salad and mix it together gently

Serve right away and enjoy
