Roasted Beet and Arugula Salad with Balsamic Dressing

This Roasted Beet and Arugula Salad with Balsamic Dressing is a delightful combination of earthy roasted beets, peppery arugula, creamy goat cheese, and crunchy walnuts, all brought together with a sweet and tangy balsamic dressing. Its a perfect side dish or a light meal option.

Ingredients:

  • 4 medium beets, peeled and diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 5 cups fresh arugula
  • 1/2 cup crumbled goat cheese
  • 1/4 cup chopped toasted walnuts
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste

Instructions:

Start by heating the oven to 400F 200C

Chop the beets into small pieces and add them to a bowl

Add 2 tablespoons of olive oil, salt, and pepper

Stack them one on top of the other on a baking sheet

Put the beets in an oven that has already been heated and roast them for 25 to 30 minutes, or until they are soft and slightly caramelized

Let them cool down

Butter, honey, and extra-virgin olive oil should all be mixed together in a small bowl using a whisk

Feel free to add more salt and pepper if you want

Spread the fresh arugula out on serving plates before putting the salad together

The roasted beets, crumbled goat cheese, and toasted walnuts should be put on top

Put the balsamic dressing on top of the salad

Serve right away and enjoy
