Ingredients:
- 1 cup gluten-free all-purpose flour
- 1 1/2 cups milk dairy or plant-based
- 2 large eggs
- 2 tablespoons melted butter or dairy-free alternative
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- Additional butter or oil for cooking
Instructions:
In a mixing bowl, whisk together the gluten-free flour, milk, eggs, melted butter, sugar, salt, and vanilla extract until smooth
Let the batter rest for 10-15 minutes to allow the flour to fully hydrate
Heat a non-stick skillet or crepe pan over medium heat and lightly grease with butter or oil
Pour about 1/4 cup of batter into the skillet, swirling it around to evenly coat the bottom
Cook for 1-2 minutes, until the edges start to lift and the bottom is golden brown
Carefully flip the crepe using a spatula and cook for another 1-2 minutes on the other side
Repeat with the remaining batter, stacking the cooked crepes on a plate
Serve warm with your favorite toppings such as fresh fruit, whipped cream, Nutella, or maple syrup
