This Hummus Veggie Panini is a delightful combination of creamy hummus, colorful vegetables, and tangy feta cheese, all pressed between slices of whole grain bread. Its a satisfying and nutritious meal thats perfect for lunch or a light dinner.
Ingredients:
- 8 slices whole grain bread
- 1 cup hummus
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 large zucchini, thinly sliced
- 1 medium red onion, thinly sliced
- 2 cups baby spinach leaves
- 1/4 cup sliced black olives
- 1/4 cup crumbled feta cheese
- 2 tablespoons olive oil
Instructions:
Preheat a panini press or grill pan over medium heat
Spread hummus evenly on each slice of bread
Layer bell peppers, zucchini, red onion, spinach, black olives, and feta cheese on four slices of bread
Top each with another slice of bread to form sandwiches
Brush the outer sides of the sandwiches with olive oil
Place sandwiches on the preheated panini press or grill pan
